Food & Environment – Support your Local Farmers

People have been talking about green living, global sustainability, low carbon but how many of us are really practicing and really understand the theory behind it.

How could we understand more about our environment & how could we support our local farmers? It starts from ourselves, day-by-day, a little-by-little, be aware to our surroundings and feel for it!

Being a chef, we are very aware of our surroundings what is the best catch of today? What’s in season? Which wine is the good match with that dish?

So how we could connect to green living, the most and easy start is from our surroundings; support our local farmers, go organic, avoid food waste, eat more greens instead of meat, avoid extra food packaging, reduce waste management. Local farming aren’t a new concept to our communities only they are being left behind in the past but with more and more astonishing information exposure about imported food poisoning & artificial ingredients which directly increase our awareness to local farming.

The most I love about local farming as you could communicate directly with the owner, find out what’s in season, how they raise/grow their produce, the last but not least you know what exactly you are getting!

Below is one of the recipe which I would like to share with you:

Spaghetti with Organic Tomatoes & Basil
7oz Spaghetti
⅓ cup orangic cherry tomatoes, cut into halves
2 cloves of garlic, minced
Handful of freshly chopped basil
Cracked black pepper
Parmesan cheese (grated) to serve

1.Place the pasta into a saucepan of boiling water and cook for 10 – 15 minutes or until al dente.
2.Drain off excess water and set aside.
3.Use 1 tablespoon of olive oil and pinch of salt, combine with cherry tomatoes.
4.Place tomatoes on baking sheet lined with aluminum foil.
5.Heat oven to 250°C and bake tomatoes for 15 – 30 minutes or until the skin starts to break.
6.Remove from oven and set aside.
7.Heat the saucepan with 3 tablespoon of olive oil over medium high heat. Add minced garlic and cook until golden.
8.Add spaghetti and cook for 3 – 4 minutes.
9.Add tomatoes and basil, cook for 2 – 3 minutes.
10.Add salt and pepper to taste.
11.Turn off heat. To serve, place spaghetti on serving plate. Top with chopped basil and parmesan cheese.
